“Coffee taught me that you have to try to find out what the land can give.”
His story
Martín Ortiz grows coffee in San Lorenzo, in northern Nariño. For years he has committed to specialty coffee, and his path has been one of trying, observing and trying again.
He was among the first in his community to experiment with fermentation. On his farm he works with honey processes, yellow and red, using aerobic fermentation and oxidation, so that the cup reveals what his land gives.
That search also shows in his facilities: he ferments in stainless steel tanks, in a space he looks after almost like a laboratory, to control the variables and repeat what works.
In the Association’s laboratory we cup each of his trials, and what we learn in the cup goes back to his farm for the next one.
